Possibly? The Rogue Squadron (Stackpole) books have an important arc about Imperial brainwashing, specifically the sort where a person acts normal until the brainwashing is triggered, then assassinates someone and commits suicide. I'm not sure if that's what you're thinking of or if you mean something more Jekyll-and-Hyde style. And Leia isn't particularly involved in that arc. Out of the books in this post, I don't think any of them prominently features both Leia and evil alternate personalities. I'll definitely be keeping an eye out as I continue, though; now I'm curious.
